During the holiday season we like to have party foods. Lots of yummy appetizers and dips. I mean, who doesn’t love to dip? Dipping is fun! I recently came across a new Spinach and Artichoke dip to try in the slow cooker and it was amazing! And so very easy! This is certainly going to be a new favorite in my house! And how easy to toss these ingredients into a crock pot, grab a bag of your favorite tortilla chips, ( mine are the thin Cantina chips) and take it to a potluck for everyone to oooh and ahhh over. Seriously, it’s that good! And it can be easily altered for a low fat dip!
Prep time: 10 min
Cook time: 2 hours
1 ( 10 oz.) bag fresh baby spinach ( chopped)
1 ( 13.75 oz.) can quartered artichoke hearts ( drained and chopped)
1 ( 8 oz) brick of cream cheese ( cut into cubes)
1 cup sour cream ( can substitute plain Greek yogurt)
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/3 cup finely chopped onion ( optional)
dash of garlic powder, black pepper and salt
Directions: Combine all ingredients in a large mixing bowl until combined. ( I like to cut down on dishes and just do it right in the slow cooker, just use a wooden or plastic spoon to avoid scraping)
Transfer dip into slow cooker, and cook on high for 2 hours until completely warmed through and everything is melted together. Enjoy!
