Taco Soup

My cousin brought this delicious soup over to my house several years ago and I was hooked. I was pleasantly surprised at how incredibly easy the recipe is.  I’m telling you, get the ingredients however you need to because this is going to be a favorite.  I have two teenagers and three littles in my home, taste buds of all sorts to please and this soup, my oh my, it was like a gift from heaven. All five of my kids love it and my husband reminds me every time I make it that it’s his favorite. My nine year old son always rinses his bowl out followed by an, “mmmm, mmmm, mmmm, that was good!”

My favorite part about this is that I brown up the meat with a diced onion, toss that with all of the remaining ingredients in the crock pot and you have an easy, crowd pleasing, meal! I have made this for Halloween before, making it so nice to come back from a chilly night of trick or treating with the kids and eat something healthier than candy. They usually have festive corn chips during the holidays to top it with too!  So fun.

You can make it with ground turkey, ground chicken or ground beef. I have tried them all, but I do prefer the beef; a nice 90/10 blend. When the soup cools in the fridge, the remaining grease will come to the top and harden, so the less grease the better! The recipe that I love calls for a 12 ounce can or bottle of light beer. I have used several kinds. For the homes without alcohol, no worries, you can substitute that 12 ounces for extra water, or beef stock. They are both delicious. I love the one with beer, which is odd because I loathe beer, even the smell of it!

I always top our soup with a hand full of sharp shredded cheddar( you can certainly use a taco blend or Mexican blend), a dollop of light sour cream, and a dollop of wholly guacamole. I buy guacamole already made because avocados scare me. I have no clue how to know if they are good or not. So, thank you Wholly Guacamole for knowing! Finish reading the ingredient list, run out and get them, or grab them from your freezer or pantry and GO make this soup!

Taco Soup
Prep time: 10 minutes
Cook time: 4-5 hours on low setting
Serves 8-10 people
1- lb lean ground beef or turkey
1- medium yellow onion ( diced)
1-  10 oz. can of diced tomatoes with green chilies
2- cans of corn
2- cans of chili beans
1- can black beans
1- 12 ounce can or bottle of light beer OR broth substitute
1- packet taco seasoning
1- packet ranch seasoning ( I have used the dip or dressing mix, both work well)
1- cup water
Garnish: sour cream, shredded cheese, guacamole, chips, green onion, or whatever else you can dream up.
Directions: Dice medium yellow onion and toss in pan with choice of meat. Brown and drain excess grease. Toss in crock pot. Add remaining ingredients, no draining necessary! Use all that liquid! Stir and cook on low setting for 4-5 hours. Garnish with your favorite toppings and chow down!
