Around the same time I was introduced to Essential Oils, I was also introduced to this recipe. At first I was skeptical. I mean what chocolate, sweet lover wouldn’t be when they hear of beans combined with brownies? YUCK! At first thought i’m singing the song my beloved Grandfather use to sing with me as a little girl. We would chant,
” Beans beans the magical fruit, the more you eat, the more you toot.” Being new to the healthier version of me journey, I had to give it a whirl. The great ladies who were introducing me to all kinds of new things with essential oils had already earned my trust. I had nothing to lose by trusting their judgment and trying these blessed black bean brownies. Oh, my heavens! They were fudgy, and delicious, and healthy! Nothing like I expected. Cant taste a hint of beans at all. No fruit tootin’ here, just, mmmm, mmmm, goodness. Since being gifted this amazing recipe I have handed it out to at least a dozen or more people. Each one being just as delighted as myself. The basic recipe is as follows. Which is amazing. When I really want to get some oooh and aaahs when serving this I mimic a little yummy bar that I found at Whole Foods that is topped with natural peanut butter, mini chocolate chips and chopped peanuts. This….is amazing! Keep it in the fridge, eat a slice for breakfast with your coffee! Jam packed with protein and natural ingredients and the very best part, NO GUILT! Oh, and one more thing! As if all of this was’nt enough to tickle your fancy let me just add, you can make these bad boys in the blender! Say What?!!!!!! Total winning at life!
Black Bean Brownies
Pre-heat oven to 350
Grease an 8×8 pan ( you can use butter, spray or coconut oil)
1 can 15 oz. black beans, rinsed and drained
2 large eggs
1/4 cup cocoa powder
2/3 cup honey
1/3 cup coconut oil
1/4 teaspoon baking powder
pinch of salt
3/4 cup chips ( sugar free, chocolate or dark chocolate)
Directions: Put all ingredients except chocolate chips in blender. Blend until smooth. Add 1/2 of the chocolate chips. Stir with spoon. Pour into greased pan and top with remaining chips. Bake on 350 for 30 – 35 minutes. Let cool. Cut and serve. Or if you want to be real fancy top these babies with some more yummy goodness! Make sure to store in fridge!
