Oh my heavens ! When my sweet friend and neighbor asked me to try this traditional Philippine desert , I wasn’t sure if I would like it . I mean “ sweet avocado pudding “??? M’kay !
I fell in love with it from the first spoon / sip !
I have adjusted the recipe to fit dairy free , sugar free journey some of my friends are taking .
So here it is :
You will need :
1. Can of coconut milk/cream ( note: not the coconut water !)
2. One ripe avocado.
3 . Peppermint vitality essential oil
4. Stevia ( to taste )
5. Almond milk (1 cup)
Put all the ingredients in the blender with a handful of ice or more if you like, blend until smooth and creamy consistency. Be cautious with the peppermint vitality EO, try 1 drop first ( I didn’t think 1 drop was enough, 2 drops was enough to provide cooling sensation without overwhelming ice/heat 🙂 )
I used 3 stevia packets and it was plenty sweet for me . My kids wanted a little extra sweetness. If the shake is too thick , add more almond milk to the desired consistency .
