Chocolate Eclair Cake

My Father came to visit one year for Easter. I generally always make everyone in the house their favorite side dish or dessert. Allowing for each person to look forward to that one special thing that they requested. My Dad, had told me about a dessert that he looked forward to on Easter that his sister-in-law would make. Chocolate Eclair Cake. So delicious and super duper easy. Which makes it a huge bonus for me! I, have actually requested this dessert to be made for me for my Birthday or Mothers Day. Which is generally easy to deliver seeing how simple this recipe is. My kids can certainly whip it up in no time!

Chocolate Eclair Cake
Unsalted Saltine Crackers
2 boxes of vanilla or french vanilla instant pudding
1 container of Cool- Whip
1 jar of Chocolate Frosting
3 cups Milk
Line the bottom of a 9×13″ pan with unsalted saltines.
In a medium size bowl, combine pudding mix and milk and whisk until combined. Fold the entire container of cool-whip into the pudding mixture. Spread half the mixture over the first layer of unsalted saltines. Top with another layer of crackers and the remaining pudding mixture .
Top the pudding mixture with one final layer of crackers. Take the lid and foil off of the chocolate frosting and pop it into the microwave for 30-40 seconds until thin enough to pour on. Pour the entire container of frosting over top cracker layer and smooth out. Top with your favorite sprinkles. Cover and refrigerate overnight.
